Like many Italian dishes, Gnocchi is named for the place where Sorrento originated. This colourful city south of Naples is built on a steep hill overlooking the Mediterranean sea. It is a famous sweet lemons used to make Limoncello.
Italians give credit to a 16th century Sorrento chef for creating this baked gnocchi recipe. The tavern chef was experimenting with potatoes and tomatoes, two New Word ingredients that were still relatively unknown in Italy. The winning combination of potato gnocchi with tomatoes, fresh mozzarella cheese and basil was a touch of genius that locals embraced immediately.
Five centuries later gnocchi is just as popular today, in Italy and beyond. Store bought gnocchi works well in this dish but homemade gnocchi is my best option.
To give yourself a head start, make the gnocchi ahead of time and freeze them. Then when you are craving Italian comfort food for dinner, use your frozen gnocchi to make this gnocchi. Or for an easier version of handmade gnocchi, try substituting with homemade ricotta gnocchi.
What is Gnocchi?
Gnocchi is a type of pasta that is typically made from a combination of mashed potatoes, eggs and flour. These small soft dumplings have a distinctive pillow texture.
It is a popular Italian dumpling that has a soft, pillow texture that pairs so well with a delicious, velvety creamy tomato sauce and topped with the rich burrata or cheese.
Ingredients Instruction:
Olive oil: This is the base of the sauce and it is used to saute the garlic. I suggest using good quality olive oil.
Whole Canned Tomatoes: Use high quality whole tomatoes in this sauce but you can use San marzano canned tomatoes since they have superior flavour and freshness.
Garlic: This recipe for a good amount of garlic so finally dice your garlic. I Can use this easy Hand chopper to chop my garlic.
Spices: Pepper, salt, red pepper flakes add flavour and spice. If you like a little sauce you can add extra red pepper flakes.
Gnocchi: You use a type of fresh gnocchi. You can usually find fresh gnocchi in the refrigerated section, dried gnocchi in the pasta section. I use fresh gnocchi or dried gnocchi in this recipe.
Heavy Cream: This adds richness and creaminess to the sauce.
Fresh Burrata or Cheese: Burrata adds another layer of creaminess to this tomato cream gnocchi. Fresh burrata are filled with cream, then it adds richness to the recipe.
Fresh Basil: You add fresh basil ribbons to garnish.
Optional: You can add parmesan Cheese and Baby Spinach.

- 2 pints cherry tomatoes
- 1/4 cup extra virgin olive oil.
- 6-8 garlic cloves, peebled and lightly crushed
- 1/2 red pepper flakes.
- 1/2 freshly cracked black pepper
- 1/2 cup heavy cream.
- 2 potato gnocchi
- 2 balls fresh burratas cheese
- 1/2 cup fresh basil leaves, slice or torn
How to Make Creamy Tomato Gnocchi with Burrata recipes?
You are going to love how easy it is to make tomato gnocchi and burrata then you only need a handful of ingredients and a large skillet to get dinner on the table in 30 minutes –
Step-1: You are using fresh tomatoes, half or quarter them depending on the side. Then mince your garlic and gather the rest of your ingredients.
Step-2: Now heat olive oil in a large skillet or braiser and add the tomatoes. There for season with salt and pepper, the salt helps them break down. Cook for 10-15 minutes, until the tomatoes have really broken down, then add the garlic, tomato paste, chilies and cook for another couple of minutes.
Step-3: Then you bring a small pot of salted water to a boil and add the gnocchi. Cook for 2-4 minutes, or until the gnocchi starts to float.
Step-4: While the gnocchi cooks, add a bit of cream to the sauce and bring to a simmer. Then using a slotted spoon, transfer the gnocchi to the sauce. A bit of the cooking water comes with it.
Step-5: Then you divide the burrata into pieces and nestle it into the sauce and gnocchi. Now you sprinkle parmesan over the top and add some freshly torn basil. Simmer for another 5 minutes, until the burrata is melty.
Now you serve immediately with more parmesan and fresh basil.
Why use burrata cheese?
Burrata is a luxurious Italian cheese, and is a star in this recipe. This fresh cheese has mozzarella cheese on the outside, but the inside is filled with a luscious mixture of cream and mozzarella. The result is a creamy and centar oozing out when cut open. Burrata adds a decadent element to the dish, the overall richness and depth of flavour. If burrata is unavailable, mozzarella cheese can be a suitable alternative, though it would not provide the same creamy interior.
Why use canned tomatoes instead of fresh?
You can use either canned whole tomatoes or fresh tomatoes but I do prefer to use whole, peeled canned tomatoes for several reasons. You use canned tomatoes in the creamy tomato sauce to offer a convenient and consistent flavours plus the tomatoes are already peeled.
Canned tomatoes are picked at the peak of ripeness and quickly processed, preserving their freshness. A rich vibrant tomato flavour for your sauce especially when fresh tomatoes are out of season and I love to use high quality canned tomatoes, such as San Marzano tomatoes, which elevates the fresh flavour of this dish.
Extra Tips and recipe suggestion:
Add meat – For your more protein add a chicken cutlet, meatballs or even sauted shrimp to this dish.
Make Gluten Free – Swap the traditional gnocchi for chickpea or cauliflower gnocchi, which are both gluten free.
Add veggies – The easiest way to add veggies to this tomato gnocchi recipe is to toss in some fresh baby spinach. Or you can add mushrooms and fennel are also great additions.
Spicy make – You add 1/2 to 1 teaspoon red pepper flakes to the tomato sauce.
How to store:
To store refrigerated leftovers in an airtight storage container for up to 4-5 days.
To reheat, rewarm gently in the microwave or on the stovetop. Add a splash of broth or water as needed to help rehydrate the sauce.
Do not heat burrata if possible. Add the burrata after the dish is warm.
To Freeze this is a fantastic freezer meal, simply freeze leftovers(without burrata) in an airtight freezer safe storage container for up to 3 months. Let thaw overnight in the refrigerator before reheating.
