Edamame – You can use fresh edamame but I have used pre-cooked frozen edamame that has been deforested for this recipe. You will need to boil them first.
Garlic – You can use two large cloves may sound like a lot but you use enough garlic in here that every edamame has a few bits of crisp garlic clinging on to the pod.
Crushed chili Flakes – I used crushed red pepper flakes, but any pepper flakes you have on hand will work or you can use crushed your own dried chilies. You can use a chili paste, like doubanjiang, or sambal oelek. Just be aware that these contain salt, so you may need to reduce the salt you add.
Whole black peppercorns – Black pepper starts losing its potency and aroma as soon as its ground , so while the pre-ground stuff will work, it would not taste nearly as good as freshly cracking the peppercorns yourself. But I usually do this in a mortar with a pestle but if you don’t have one you can pulse it a few times in a food processor or blender, you can put it in a zipper bag and pound the bag with something heavy like a pot or rolling pin.
Salt – I used flaky sea salt for this but any form of salt like soy sauce, fish sauce or oyster sauce, will work while changing its flavor.
Sesame Oil – I told you my spicy edamame was made with a lot of sauces. Add sesame oil for a bit of a very tasty flavor.
Vegetable Oil – You can cook the garlic for vegetable oil.
Mirin – You can use a little bit of sugar or maple syrup.
Right amount of cooking Ingredients:
For the edamame pods
- 300g 0r 400g frozen edamame in the pods
- 2-3 tsp cooking salt
- 4 cup water
For spicy garlic sauce
- 2-3 tsp garlic
- 3 tsp sesame oil
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp chili paste
- 2 tbsp vegetable oil
- 1/4 tsp miso paste
- 1 teaspoon dried chili flakes
- 1 teaspoon whole black peppercorn
How to cook this recipes?
1 – First you gather all the ingredients. Then you add 4 cups of water to a pot and bring it to a boil over medium-high heat. Once boiling you use 1 tbsp kosher salt.
2 – Now you add 300-400g edamame (frozen) pods and cook, stirring once in a while for 5 minutes or until the soybeans are an al dente consistency. Frozen edamame imported from Japan is always precooked so you only need to boil them for 1 minute to reheat.
3 – If you see foam forming on the surface of the water, remove it with a fine mesh skimmer because we do not rinse the pods after cooking. When the edamame is done cooking then drain in a colander. Or the edamame will lose their salted flavor then set a side.
4– Now heat a large frying pan over medium low to medium heat. When the pan is warm you add 3 tbsp oil and 2-3 tsp garlic cloves and saute until fragrant. But you do not burn the garlic. Then add 1 tbsp chili paste and 1/4 tsp miso and stir until combined.
5 – Add 2 tbsp soy sauce and 2 tbsp mirin and cook, stirring gently, until the sauce thickens a little bit.
6 – At last you add the cooked edamame pods to the pan and toss to coat them with the sauce and transfer to a plate and serve ware or at room temperature. Then you eat, remove the soybeans from their inedible pods and enjoy.
