Recipe History

Korean seaweed soup also known as Miyeoguk has a long history in Korea and has several cultural and nutritional significance: This tradition of eating seaweed soup began during the Goryeo Dynasty after people noticed whales eating seaweed after giving birth. The soup was also dedicated to Samshin Halmoni, the three goddesses of childbirth and destiny in Korean mythology who assists in childbirth and blesses newborns.

Main Ingredients:

  • 120-130g beef chuck or round steak and sliced into smaller pieces.
  • 15g dried seaweed (Miyeok)
  • 1/4 teaspoon fine sea salt (or more to taste)
  • 1 tablespoon sesame oil
  • A few cracks black pepper
  • 1 1/2 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 5 cups water

How to make this recipe?

First you soak the dried seaweed in cold water for 5-10 minutes while the dried seaweed allowing it to expand this cold water. Now you drain the water and rinse the seaweed a couple of times in running water. When you drain the water out and seaweed cut it with scissors – about little finger lengths and then set it aside. 

Now you combine the sliced beef meat with the salt and black pepper in a small bowl.  This ingredients mix them very well and set aside. 

Then preheat a medium pot over medium heat and now you add this pan in to the oil, seaweed and beef and stir them slowly until the beef is cooked for about 2-3 minutes. Then you add now other this recipe ingredients the soy sauce, garlic and water and then cover cover the pot and boil medium high heat until the meat is fully cooked for 10 – 15 minutes. Now your soup is ready and this recipe taste with more salt if needed.

This recipe is for a variety of Korean soy sauce used to season soups recipe. It is saw this recipe light in colour, less sweet, but saltier than basic soy sauce. It is something sold as soy sauce for soup by Korean brands. If unavailable this soup recipe taste then you use salt to taste. 

This recipe is based on a dried Miyeok that does not require soaking. If needed, soak in cold filtered water for 30 minutes, drain, squeeze and rough chop into 2 -inch pieces for the recipe. 

Many recipes use garlic with beef but garlic really overpowers the flavour of seawees so you do not use garlic. You cook more Miyeok gook the better so do not worry about reheating it many times. Just make sure you add a bit of water every time to make sure the soup does not get too concentrated and salty.
