Recipe Ingredients:

For four spicy shrimp and salmon burgers

  • 400g salmon filet (skinned and bones remove)
  • 250g shrimp (cooking after peeling and cleaning)
  • 1 slice fresh whole wheat sandwich bread
  • 1/2 medium onion chopped
  • 1 small red chili pepper chopped
  • Sea salt fine
  • Black pepper
  • 3-4 green onion tops, minced
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon cayenne pepper
  • For the spicy mayo
  • 2 tablespoon ketchup
  • 4 tablespoon good quality mayonnaise
  • 1 teaspoon hot sauce

To cook and assemble the burgers:

  • Onion slices
  • 1 tablespoon light oil for pan frying
  • Lettuce leaves
  • Tomato slices
  • Spicy mayo
  • 4 hamburgers buns

How to make this recipe?

Step- 1: First you salmon and shrimp out on a cutting board and season them with salt and a few good grinds of fresh black pepper. Then you put the slice of bread into your food processor and process until it is large fluffy crumbs. Now add the onion, chili pepper, mustard powder, cayenne and a few good grinds of fresh black pepper and pulse until all is well combined. 

Step- 2: Now you cut salmon fish into two equal pieces and cut 1/4 of the salmon in small pieces. Or cut 1/4 of the shrimp into small pieces. Now add the salmon and shrimp pieces into the food processor and pulse until you have a thick paste. Tip the mixture from the food processor out into a bowl.

Step- 3: Now then you cut the balance of your salmon and shrimp into small cubes. Add them to the paste bowl along with the green onions and mix well with a wooden spoon. 

Step- 4: Then cover a plate or platter with cling film. Then you take from four patties by shaping them with wet hands and place them on the covered plate. The cling film makes it easy to remove the patties from the plate because you can lift one side and tip the patty into your hand. Then, each patty was just shy of 200g.

Now you drizzle the light oil into your non-stick pan and cook the patties over a medium high heat for about seven minutes on one side.

Step- 5: When the patties one side is cooked then turn and cook on the other side for another seven minutes until they are cooked through. 

Now your recipe is cooked then you serve on toasted buns with salsa rosada or mayo sauce, lettuce, tomato and onion. You pinch them, the radishes are just for nibbling and enjoy eating with family.

Tips:

A food processor makes mixing up the ingredients for the prawn and salmon patties so much easier. So, simply pulse the ingredients so they keep some texture to the salmon. 

Do not over process otherwise the prawn and salmon will get pasty. 

If you do not have a food processor then you use a knife to chop up the prawn and salmon into really small pieces by hand and mince onion, cilantro, ginger and garlic. 

I discovered that my patties do not fall apart very easily when I make them in the food processor. Yours are still falling apart, you can add one egg to the recipe to bind it all together. 

You can also use gluten-free bread crumbs. The total calories do not include the buns as they will vary for different brands and types of buns. 

Using fresh fish is best when making these burgers but if you can not access any then frozen will also work fine.

The patties can be made in advance and stored in the fridge – cover with cling film. 

If you process them too much you will have a gummy chewy salmon burger by only pulsing about 10 times to retain the fish texture.

You certainly can pop all the ingredients on a chopping board and go to town. You can add all the ingredients together and mix them up. It saves on washing up but personally, I find using the mini blender a little easier.

Can I reheat the burgers?

Reheating a fish burger, as long as it’s only once, would not hurt or harm you but I would advise against it as it will end up being quite dry. You can eat them cold if you like and dip them into your favorite sauce or add to a nice salad.

What other fish can I use?

Yes, to make a fresh patty like the salmon one in this fish burger, you need to use an oily fish so I suggest things like seatrout, tuna, swordfish or mackerel. If you are a white fish, then you can batter or breadcrumb the fish and fry it.
