Main Ingredients:

  • 4 boneless skinless chicken breasts diced
  • 1/2 cup prepared salad dressing
  • 3 cups chicken broth
  • 6 tablespoon unsalted butter divided
  • 8 ounces sliced mushrooms
  • 1 onion diced
  • 3 tablespoon all purpose flour
  • 1 1/2 cup heavy cream
  • 5 or 6 slices bacon cooked and chopped
  • 1 cup grated Swiss cheese
  • 2 tablespoon fresh lemon juice
  • 1-2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups diced tomatoes
  • 1/4 cup minced fresh parsley minced
  • 1 pound angel hair pasta

How to make this recipe?

Step- 1:

First you combine diced chicken breast and dressing salad in a large ziplock back. Then refrigerate and let marinate for 30 minutes or overnight. Preheat the oven to 350 degree F, grease a large casserole dish and set a side. 

Step- 2:

Now  you take in a medium saucepan, heat 3 tablespoon butter. Then remove the chicken from the marinade and cook in butter until well golden brown, about 6 minutes. Then remove from the pan and place inside a large greased casserole dish. 

Step- 3:

Now  you add remaining 3 tablespoon butter, mushroom and onions inside the pan then cook over medium heat until soft and caramelized about 7 minutes. Add your flour into the onion and mushrooms and cook for 1 minute and stirring constantly.

 

Step- 4:

Then you whisk the broth and cream into the mushroom mixture and bring to boil constantly stirring and cook for 4 minutes. Mix in the bacon, cheese, lemon juice, salt and pepper into the onion mixture and cook until the cheese is melted. Pour over the chicken in the casserole dish and sprinkle diced tomatoes and parsley over the casserole and bake uncovered for 25 minutes.  

Step- 5:

Now cook angel hair pasta according to package directions and remove the casserole from the oven and mix cooked pasta. Then you serve this dish and enjoy eating with your family.

I prefer a short grain rice in this casserole because I like a stickier rice for a casserole dish but a longer grain rice would work as well. Also brown rice can be used as well but the cooking time would be a bit longer. 

Storing Suggestion:

When you prepare the recipe to the point of baking then you wrap the casserole in two layers of foil and Label the foil with the baking instructions, date and name of the casserole. Then you freeze this dish for up to 3 months. When you are ready to eat then you defrost in the refrigerator overnight and bake as directed in the recipe and then you serve this recipe. Or you store it in an airtight container for 3-4 days in the fridge. If freezing, ensure that your dish is wrapped in both plastic wrap and aluminium foil to prevent freezer burn.

Absolutely, can I use for this recipe substitute green Greek yogurt. Greek yogurt in pretty much all of my recipes is sour cream. They have very similar consistencies because they are just an additive, their flavour is not really showcased.
