- 1 onion
- 1 cup grater carrot
- 3 cloves garlic
- ½ cup beef stock
- 400g tin chopped tomatoes
- 1 tablespoon sugar
- 1 tablespoon worcester shire sauce
- 2 tablespoon tomato paste
- 1 tablespoon fresh herbs(oregano/rosemary/basil/parsley)
- ¼ teaspoon salt( start with this and add more to taste)
- 400g dried spaghetti
- ¼ teaspoon black pepper(start with this and add more to taste)
- Grated cheese to serve
- 2 tablespoon olive oil
- 2 bay leaves (dried)
- 1 red chili deseeded and finely chopped
- 125ml red wine
How to make this recipe?
Step 1: First you take a large cook pan on a medium heat and then add 1 tablespoon olive oil. Now add 4 finely chopped bacon and fry for 10 minutes until golden and crisp.
Step 2: Then you reduce the heat and add the 2 onions, 2 carrots, 3 garlic cloves, 2 celery sticks and 1 teaspoon fresh herbs, all ingredients finely chopped, and now fry for 10 minutes. Stair the vegetables until it softens.
Step 3: Now turn the heat to medium high, add 500g beef mince and cook stirring for 3-4 minutes until the meat is brown all over. Then add 2 tablespoon tomato chopped, the finely chopped leaves from ¾ small pack basil, 1 teaspoon sugar, 1 teaspoon dried oregano, 2 bay leaves, 2 tablespoon tomato paste, ½ cup beef stock cube, 125ml red wine and finely chopped red chili, ¼ teaspoon salt and ¼ teaspoon black pepper. Those are stirred with a wooden spoon, breaking up the chopped tomatoes.
Step 4: Then bring to the boil, reduce to a slow simmer and cover with a lid. Cook for 1 hour 15 minutes stirring until you have a rich and thick sauce. Now add the grated cheese and check the seasoning and stir.
Step 5: When the Bolognese is finished then you cook 400g spaghetti. First you boil the water and add the spaghetti into the water. Now the spaghetti is boiled then drain the spaghetti and either stir into the Bolognese sauce or serve the sauce on top. You serve with more grated cheese the remaining basil leaves.

Meat – You some traditional slow cooked bolognese sauce is made with a mixture of beef and pork mince. Beef for flavor, pork for juiciness. So I recommend not using this for midweek.
Canned tomato – Canned tomato can be notoriously sour. When you touch sugar it makes an incredible difference. The amount required will depend on how sweet or sour the tomatoes and tomato paste is to taste. I use the better quality the less sour they are so the less sugar you will need this recipe.

I use fresh or dried red chili Bolognese to get better the longer it is cooked. It is even better the next day.
